Tahini and Ginger Dressing

This is one of my favorite salad dressings. I don’t know how many times I made this, but I never get tired of it. It doesn’t contain any oil other than the oil from tahini and is very low in fat (about 35 calories per tablespoon). It certainly beats commercial salad dressings that contain a lot of dubious ingredients!


5 Tbsp tahini
1 Tbsp miso or tahini
3 garlic cloves
1 inch-length ginger
1 Tbsp tamari soy sauce
3 Tbsp rice vinegar (I used brown rice vinegar)
2 tsp sake (optional)
1 Tbsp maple syrup
7 Tbsp water
1/2 tsp salt
1 tsp hot chili paste (optional)


  1. Peel and slice garlic and ginger.
  2. Place all the ingredients in the food processor or blender and process until the dressing becomes smooth and creamy.
  3. Add more water if needed.
  4. Infuse love and serve with your favorite green salad.

Yield: 1 cup
