Sweet Potato and Broccoli Salad

This is a colorful side dish that is easy and quick to make. I used a homemade tahini-based vegan sauce (recipe below), but you can use mayo or sour cream if you are not vegan.

Ingredients:
1 large sweet potato, peeled and diced
1 bunch broccoli, cut into small pieces
2 Tbsp walnuts
2 Tbsp raisin (Omit if you have blood sugar issues)
1/2 tsp cinnamon
1/4 cup tahini-based vegan sauce (recipe below)
Salt
Pepper

1. In a steamer, steam sweet potatoes.
2. One minute before the sweet potatoes are done, add broccoli.
3. Transfer the steamed vegetables to a bowl.  Add walnuts, raisin (if using), cinnamon, and sauce and mix well. Season with salt and pepper.
4. Refrigerate for a few hours.

Servings: 2

Tahini-based Vegan Sauce

Ingredients:
3 Tbsp tahini
1 tsp lemon juice
1 tsp maple syrup
Salt

1. In a small bowl, put the first three ingredients and a little water and mix well.
2. Season with salt.
