Sliced Tomatoes with Honey Balsamic Dressing

This is a very simple yet pretty looking tomato salad. It’s perfect when you have dinner company since it doesn’t take long to prepare and you can concentrate on the other time-consuming dishes. If you eat dairy products, you could sprinkle some goat cheese crumbles on top of tomatoes to make it look fancier.

Ingredients:

1/2 small onion
2 large chilled tomatoes, sliced into 1/4-inch thick rounds
Several basil leaves, cut into chiffonade
1 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar
1 tsp honey
Salt to taste

Instructions:

  1. Slice the onion very thinly and soak in water for about 20 – 30 minutes. Drain.
  2. In a small bowl, whisk olive oil, vinegar and honey.
  3. Arrange tomato slices on a large plate(s), place onion slices in the middle and top with basil.
  4. Sprinkle some salt on tomato slices and drizzle the dressing on top of the salad.
  5. Infuse love and serve immediately!
