Raw Vegan Wedge Salad

The other day I got cravings for a wedge salad, but I didn’t want to go to Outback Steakhouse or TGI Friday’s to order one, so I created a healthy version (raw vegan). Yes, it’s doesn’t have the richness that a blue cheese dressing can bring, but it satisfied my cravings.

Ingredients:

1 iceberg lettuce
1 small tomato, diced
1/4 purple onion, sliced
1/4 cup raw walnuts, chopped
Black pepper

Dressing:
1/2 cup raw cashews
1 garlic clove
2 Tbsp fresh lemon juice
1/4 tsp salt
4-6 Tbsp filtered water

Instructions:

  1. Cut the lettuce into 4 wedges and place them on four individual dishes.
  2. Sprinkle diced tomatoes, onion slices and walnuts on top of the lettuce and around it.
  3. In a blender, blend the ingredients for the dressing.
  4. Drizzle the dressing over the lettuce and sprinkle some black pepper.
  5. Infuse love and serve!
