Radish Salad with Cashew Mustard Dressing

I received giant round white radishes in the organic vegetable delivery box the other day. I wanted to take advantage of the freshness and minimize cooking, so I came up with this simple raw salad. It’s very refreshing and simple to make! I suggest saving any leftover radish greens for making green smoothies.

Ingredients:

3 round white radishes
2 stems radish greens
6 Tbsp cashews (soaking for 30 minutes – 2 hours is optional)
2 Tbsp lemon juice (from 1/2 lemon)
2 tsp whole grain Dijon mustard
1 tsp maple syrup or honey (not vegan)
salt and pepper to taste

Instructions:

  1. Peel and slice radishes into bite-size pieces.
  2. Chop radish greens into bite-size pieces. Place both radish slices and greens in a bowl.
  3. Place the remaining ingredients in a blender and mix well to make a dressing.
  4. Add the dressing to the bowl and mix well. Refrigerate for a couple of hours or longer.
  5. Infuse love and serve!

Servings: 4-6
