Green Salad with Cashew Dressing with Curry, Lemon and Pesto

One of my favorite local pizza restaurants that serves gluten-free pizzas has a green salad with cucumbers, red peppers & shrimp tossed with garlic sauce, pesto sauce, curry & lemon on their menu. The dressing is delicious, so I wanted to create something similar. I must say the end result is pretty close to the original.

Please feel free to add whatever you like or have to the green salad. Ideas include carrots, cucumbers, celery, red onion, green/red/orange/yellow peppers, avocado, olives, nuts, seeds, raisins, fresh herbs, shrimp, and fruits.

Ingredients:

1/2 cup raw cashew nuts
6 Tbsp filtered water
2 Tbsp lemon juice
1.5 Tbsp pesto (homemade or store bought)
1 tsp curry powder
1 clove garlic
1/4 tsp salt
12 cups salad green mix
4 cups additional salad ingredients (Please see the above note for suggestions.)

Instructions:

  1. In a blender, mix the first 7 ingredients from cashews to salt to make a dressing. Adjust the amount of water and salt.
  2. In a large bowl, place salad greens and additional salad ingredients.
  3. Toss with the dressing.
  4. Infuse love and serve immediately!
