Gluten-Free Bread Pudding

I bought a loaf of gluten-free banana bread from a local bakery. I was so disappointed because it was very dry, so I turned it into yummy bread pudding.

1 loaf gluten-free bread (about 8 x 3 inch (20 x 8 cm) loaf)
2 eggs
1.5  cups almond milk
1/2 tsp cinnamon
1/8 tsp nutmeg
1 tsp vanilla extract
Sweetener of your choice to your taste


  1. Preheat the oven to 350F/180C degrees.
  2. Cut dry bread into cubes and place them in a 9×5 inch (22.5 x 12.5 cm) loaf pan.
  3. In a bowl, combine eggs, almond milk, cinnamon, nutmeg, vanilla extract, and sweetener of your choice to your liking. Mix well and pour over the bread.
  4. Bake for 45 – 55 minutes.
  5. Slice, top with whipped cream, ice cream or frozen yogurt if you like, and serve it hot or cold.
