Easy Lengil Soup

Lentils are an excellent protein source for vegan and vegetarians. One cup of lentils provides 18g of protein. I used brown lentils here, but you can use green or red lentils as well. If you use red lentils, please reduce the cooking time as it cooks much faster.

Ingredients:
1/2 Tbsp olive oil
1 large onion, chopped
2 garlic cloves, minced
1/2 tsp curry powder
2 carrots, peeled, cut in half lengthwise and sliced
4 cups vegetable stock
3/4 cup brown lentils
1-2 tsp hot pepper paste or 1/4 tsp cayenne powder (optional)
Salt
Pepper
1/4 cup parsley for garnishing

Instructions:

  1. In a stock pan, heat oil and sauté onion, garlic and curry powder until the onion becomes translucent.
  2. Add carrots and sauté for 1 more minute.
  3. Add the remaining ingredients except for the last three ingredients.
  4. Bring to boil, cover and let it simmer for 30-45 minutes or until the lentils become soft.
  5. Puree in a blender or by using a hand blender.
  6. Adjust with seasonings.
  7. Top with chopped parsley.
