Corn and Vegetable Salad with Sweet Chili Vinaigrette

This simple corn salad is enhanced by the Asian inspired sweet and spicy vinaigrette. It is a perfect accompaniment to your potluck or BBQ outing. It tastes much better if you use fresh corn. Please enjoy it while it is still warm enough to do barbecue!


2 tsp apple cider vinegar or brown rice vinegar
2 tsp maple syrup
2 tsp olive oil
1 tsp ginger, grated
1 tsp ketchup
1/4 – 1/2 tsp hot chili pepper, crushed

2 cups fresh corn or frozen corn, steamed
1/2 cup tomato, diced
1/2  cup green peas or shelled edamame, steamed
1/2 cup red, orange, yellow, or green pepper or any combination, diced
1 tsp fresh herbs of your choice, such as cilantro, parsley, basil or shiso (Japanese basil), chopped
Salt and pepper to taste


  1. In a small bowl, combine all the ingredients for the vinaigrette.
  2. In another medium bowl, combine all the vegetables.
  3. Pour the dressing and mix well. Adjust the taste with salt and pepper.
  4. Chill for a few hours. Infuse love and serve!
