Coconut Balls

This is a dessert containing healthy fat that you can make when you feel like you want to finish your meal with a little bit of something sweet. No cooking or baking is required and it took me only about 15 – 20 minutes to make. My husband really liked them and ate 7 of them right away before I stopped him. If you have time to soak nuts and dry them before you make these balls, it’s even better because soaking removes enzyme inhibitors contained in nuts. Please Google how long you should soak your nuts since the length varies from nut to nut.


1/4 cup nuts (I used pistachio nuts)
1 cup unsweetened coconut flakes
1/4 cup coconut oil, melted
3 Tbsp liquid sweetener, such as coconut nectar or maple syrup
1/2 tsp vanilla extract
pinch salt
2 Tbsp raw cacao powder or cocoa powder


  1. In a food processor, place nuts and process until they become tiny pieces.
  2. Add coconut flakes, melted coconut oil, liquid sweetener, vanilla extract and salt and process.
  3. Make balls using hands.
  4. Roll these balls in cocoa powder to coat.
  5. Refrigerate for at least 30 minutes.
  6. Infuse love and serve!

Yield: About 18 balls
