Celeriac Carrot Leek Potato Soup

Celeriac or root celery is a cousin of leaf celery and is commonly used in soups and salads. It works as a natural diuretic and aids digestion. If you have never cooked celeriac, try some simple soups such as this one or make a celeriac and potato mash.

1 celeriac, peeled and diced
1 carrot, peeled and sliced
1 leek, peeled and sliced
1 potato, peeled and diced
1 Tbsp olive oil or coconut oil
3 cups vegetable broth
1 cup almond milk

1. Heat a pan with oil and sauté all the vegetables.
2. Add vegetable stock and cook until vegetables are tender.
3. Puree the soup in a blender or by using a hand blender.
4. Add milk and heat until the soup is hot. Season with salt and pepper.
