Cashew Miso Dip

I just received the first subscription box of organic vegetables from a local farmer and it contained a bunch of fresh asparagus. Asparagus is one of the vegetables that make a huge difference in taste when they are freshly picked. I decided to boil them for a short time and enjoy them as a healthy snack, so I came up with this simple raw vegan dip that goes with them. The dip is excellent with any vegetables. You can of course use non-raw ingredients if you are not into raw food.

Ingredients:

1/4 cup raw cashew nuts
3 Tbsp filtered water
1 Tbsp raw gluten-free miso
1 tsp apple cider vinegar
1 tsp raw honey

Instructions:

  1. In a blender, place cashew nuts and water and blend until it becomes creamy and smooth.
  2. Add miso, vinegar, and honey and blend again.
  3. Infuse love and serve with any vegetables you like.
