Beets and Quinoa Stir Fry

Beet roots and greens are rich in many nutrients and fiber. They also give you energy and cleanse your body. If you are suffering from constipation, this dish might fix your problem. This is a perfect one dish supper on a weekday night.


2 Beet roots with greens
1/2 cup quinoa
1 cube vegetable bouillon
1/2 Tbsp olive oil
1/2 large onion, sliced
1 garlic clove, chopped
Salt and pepper to taste


  1. Steam or roast the whole beet roots until you can pierce through with a folk. (This will take about an hour, but I steamed using a pressure cooker for 12 minutes under pressure.) Peel and cut into chunks.
  2. Chop the beet greens.
  3. In a small pan, place quinoa, 1 cup water and vegetable bullion and bring it to a boil.
  4. Reduce heat, cover and cook until all the water is absorbed for about 15 minutes. You will use only a half of the quinoa. Save the remaining half for another meal.
  5. In a sauté pan, heat olive oil and sauté onion slices. Add garlic and sauté until fragrant.
  6. Add beet greens, salt and pepper. Cover and cook until greens are wilted.
  7. Add cooked beet roots and quinoa and sauté until they are heated.
  8. Taste and adjust with more salt and pepper if necessary.
  9. Infuse love and serve!
