Baked Egg and Goat Cheese in Tomato Cup

This dish is perfect when you have company for brunch because it doesn’t require much preparation and doesn’t occupy your oven. You just have to pop it in a toaster oven! The ingredients are for one person. Please make as many as you need.


1 tomato
1 egg
1 Tbsp goat cheese, crumbled
Some dried herbs, such as basil, oregano or Italian
Salt and pepper to taste


  1. Preheat the toaster oven to 400°F/200°C degrees.
  2. Cut off the top of a tomato and scoop out the inside to make a tomato cup.
  3. Crack an egg into the tomato cup.
  4. Top with goat cheese, herbs, salt and pepper.
  5. Bake for 20 minutes or longer depending on your preference for the softness of eggs.
  6. Infuse love and serve immediately!
