Baked Acorn Squash

This is a super easy and quick side dish. Acorn squash is very high in vitamin C and also contains good amounts of vitamin A, thiamine (vitamin B1) and vitamin B6.

1 acorn squash
2 tsp olive oil
2 Tbsp butter
1 Tbsp maple syrup
A dash of cayenne

1. Heat the oven to 350°F/180°C.
2. Cut an acorn squash in half and discard the seeds. Cut off a slice of the bottom of each piece so that it can sit evenly in a casserole dish.
3. Coat the inside with olive oil.
4. Put a Tbsp of butter in each half, drizzle maple syrup and a dash of cayenne.
5. Bake for 45 minutes.
