Avocado Scrambled Eggs with Parmesan Cheese

A friend of mine traveled to Bali, Indonesia last year and told me that she had the best scrambled eggs at the beautiful retreat center where they stayed for two weeks to practice yoga and meditation daily. She and her friends asked how they made their scrambled eggs and they were told that the secret ingredient was Parmesan cheese! So I incorporated this tip and made this simple scrambled eggs. Feel free to add more vegetables, such as diced tomatoes and sliced mushrooms.

Ingredients:
2 eggs
1 Tbsp almond milk
2 tsp Parmesan cheese
1 Tbsp butter
2 Tbsp onion, chopped
1/2 avocado, diced
Salt
Pepper
Sushi nori seaweed sheet, thinly cut (optional)

Instructions:

  1. In a small bowl, beat eggs. Add almond milk and Parmesan cheese and mix well.
  2. Melt butter in a frying pan. Sauté onion. Add the egg mixture and make scrambled eggs.
  3. Remove from heat and mix in avocado.
  4. Transfer to a plate and season with salt and pepper.
  5. (Optional) Top with nori seaweed strips.
