Asian Flavored Roasted Vegetables

This recipe is a no-brainer. Once you chop all the vegetables and mix with a simple sauce, the oven takes care of the rest. You can get a lot of vitamins, minerals and fiber from all the wonderful veggies. It’s versatile too. Basically, you can use any vegetables you have or like.


8 cups vegetables of your choice (I used a sweet potato, purple (Hawaiian) potato, onion, asparagus, red pepper and portabella mushrooms)
2 Tbsp olive oil
1 Tbsp tamari soy sauce
1 tsp liquid sweetener, such as coconut nectar or maple syrup
1 clove garlic, minced
1 inch-length fresh ginger, minced
Salt and black pepper to taste
A dash cayenne pepper (optional)


  1. Preheat oven to 400°F/200°C degrees.
  2. Chop all the vegetables into bite-size pieces and place in a large bowl.
  3. In a small bowl, mix the remaining ingredients. Add the sauce to the vegetables and mix well.
  4. Cook in the oven for 20 – 30 minutes until all the vegetables are cooked.
  5. Infuse love and serve!
