Asian Coleslaw (Dairy Free)

Today I whipped up this simple coleslaw using Japanese and Thai ingredients. If you’d like to try something different from a usual mayo-based coleslaw, please try this for your next summer gathering!

Ingredients:

5 cups cabbage, shredded
2 carrots, shredded
1/2 red onion, thinly sliced
3 green onions, chopped
1 garlic clove, minced
2 Tbsp lemon or lime juice
1 1/2 Tbsp fish sauce
1 Tbsp rice vinegar (I used brown rice vinegar)
2 tsp maple syrup
1 tsp hot chili sauce
2 Tbsp sesame oil
2 Tbsp white sesame seeds, toasted

Instructions:

  1. In a large bowl, place cabbage, carrots, red onion and green onions.
  2. In a small bowl, combine the remaining ingredients to make a dressing and mix well.
  3. Pour the dressing on the vegetables and mix well.
  4. Refrigerate for a couple of hours or longer.
  5. Infuse love and serve!
